Spiced Bitter Melon Gratin
We offer three types of goya: "Abashi goya," "Okinawa pure white goya," and "Okinawa ganju goya.
All of these vegetables originate from Okinawa, and the word "abashi" in "abashi goya" is an Okinawan dialect word meaning "harisenbon".
As the name suggests, it has a cute, chunky shape ✨.
Okinawa Junshiro Goya and Okinawa Ganju Goya are white-colored bitter melons with relatively large surface grains.
The larger the surface grains of bitter melon, the less bitter it is said to taste, so use this as a criterion when choosing bitter melon at the supermarket 😌.
The slightly bitter taste of bitter melon and the creamy gratin make a perfect match, and even those who are not fond of bitter melon should give this dish a try 🤤.
The summer vegetable, bitter gourd, is almost finished and will be gone as soon as it is gone, so be quick!
