Today I would like to introduce

Deep-fried and soaked eggplant

Last time, we introduced dengaku miso using an eggplant called yamashina eggplant. This time, we will be using an eggplant variety called jade eggplant. This eggplant is characterized by its jade green skin and is the most watery eggplant we are currently producing!

In addition to Yamashina eggplant and Jade eggplant, they also produce three varieties of New Nagasaki long eggplant (photo #3)) 🫶.
