Summer has completely passed us by.

The weather has turned chilly and it is no longer possible to go outside in short sleeves.
How are you all doing?

It has been a week since the Halloween project, and here and there we have had customers asking us to "trick or treat".

I looked up what Halloween is and found out that it is like Obon in Japan. (I'm sure there are many theories...) I heard that the candy you get when you call out "trick or treat" has the effect of repelling evil spirits and is like Setsubun in Japan.

Recently I felt that there are still so many things I don't know.

I digress...

Speaking of things that are new this week, yes! Edamame. I am ashamed to admit that I used to think of edamame and soybeans as two completely different things until I started working here. As I mentioned in my last post, we mature and ferment edamame into soybeans to make miso, soy sauce, and tofu. The tofu that we served to our customers is based on this edamame.

Koitozairai has a very strong flavor and can be served with just salt. We serve it to our customers with an appetizing smell that makes them very happy.

Although it takes more time and effort, harvesting the whole branches keeps them fresh. In addition, all leaves are cut by hand because the moisture will evaporate if there are leaves attached.

It is just a delicious dish that you should try!
However, since the harvest season is only two weeks away, this week and next week will be our last chance to get them. Please be sure not to miss out!
