Like trevis, it is a member of the chicory family of vegetables. Castelfranco, with its attractive rose-like shape, is nicknamed "eating rose" or "winter rose" because of its harvest time.
History traces its cultivation back to 800 AD. The town of Castelfranco Veneto in the Veneto region of northern Italy and its suburbs is believed to be the birthplace of this variety.
It seems to be a luxury food in Europe, especially in Italy.
