Red okra.
As its name suggests, okra is characterized by its red appearance, but when boiled, it turns green just like regular okra. Why is this?
In size and flavor, it is no different from ordinary okra, but the secret is in the pigment. Red okra, like grapes and blueberries, contains a natural pigment called anthocyanin. These are stored by the plant to protect the fruit from UV rays and other harmful light! 🫐.
Anthocyanins are water soluble, so when boiled or heated, they dissolve and turn green 🥬🥬.
Okra has more dietary fiber than burdock root and is very effective in regulating bowel movements - and relieving constipation!
You may encounter them at dinner, for example, in bagna cauda 😌.

Well, Red Okura is no different compared to other Okuras in size-wise and in taste-wise, but the secret is in its pigment. Anthocyanin function as barriers against toxic lights such as UV sunlights. However, because of its water soluble nature, it can easily lose its color by boiling them.
Anyhow, Okra in general is a vegetable that is very rich in dietary fiber (richer than burdock roots!) and is highly effective for regulating the intestines and relieving constipation!
