Deep-fried and soaked eggplant
The eggplant in your photo is a variety called jade eggplant.
Jade eggplant is one of the few native species born in Japan and was originally grown in Tokushima Prefecture. This eggplant has a beautiful jade green color in appearance.
It is a different variety from the green and white eggplants we often see! The skin is soft, and when heated, it produces a tender texture. It has little acridity and bitterness, so it is attracting attention as an eggplant that even eggplant haters can eat🎶🎶.
