The first weekend of December has arrived. The year is just around the corner, and more and more vegetables in the fields are starting to show signs of the coming winter.
After winter leafy greens (mizuna and mustard greens) and cauliflower, we turn to root vegetables such as daikon, burdock, and chrysanthemum.
This year, we grew 5.6 varieties of daikon alone, and the photo shows one of them, a red-centered daikon!
Although it is on the buffet lineup as slices, this vegetable appears every year at this time of year!
Officially, it is called "Aomaru Benishin Daikon," and is characterized by its green skin and red center!
Even raw, this variety has no tangles and the more it is chewed, the more flavorful it becomes.
