The soybeans introduced here are called "koito zairai.
This traditional vegetable is a variety that has been protected and cultivated in the watershed of the Koito River in Kimitsu City, Chiba Prefecture.
One of the characteristics of Koito native is that there are times when it can also be eaten with edamame.
They are available in stores as edamame for a limited time only for two weeks in September and October! They then grow into soybeans.
The soybeans, which are so satisfying and robust, are also on the lineup of the lunch buffet.
