Beets are characterized by their bright red color!
This is due to a pigment called betalain, which is a type of polyphenol 🌿.
Although its appearance may make you think it is a member of the turnip family, it is actually a member of the spinach family (family Hyacinthaceae)!
It was already brought to Japan in the early Edo period.
Beets are sometimes called "eating blood" or "miracle vegetable," and the secret behind their sobriquet is their high nutritional value!
It is a superfood that contains a variety of minerals and vitamins and is rich in polyphenols and fiber 🫧.
It has a slightly sweet taste because it is a member of the sugar beet family, from which sugar beet is made.
The sugar content alone is about the same as that of strawberries!
Slow heating increases sweetness. ☺️
